Belgian Waffles – Ieatandeat Signature recipe
We like waffles and have been experimenting many recipes from all over the sources but just can’t find one that meet our expectation. We are looking for a Belgian Waffles that is crispy exteriorly but sufficiently moist with a nice soft texture interiorly, of course, the waffles must have the fragrance alluring enough that can make you fall in love with the first bite.
From the many recipes tested, nothing comes close to our liking. Finally, we decided to start creating our very own waffles recipe, adopting creative ideas with science based knowledge and pour in all our bakery knowhow and after repeated trials, we are pleased to find one that close to our favourite.
With the request of our followers, we decided to share this supposedly secret recipe with you. Hope you enjoy this signature waffles presented by ieatandeat.
Do note that this Belgian Waffles recipe is more complex in preparation when compared to those available on the internet, good waffles never come by easy and so be more patience and enjoy baking!
Portion: make 20 small waffles
Preparation time: 1 hour
3/4 cup of fresh coconut milk
3/4 cup of V-Soy Soya bean milk (only this brand is good, don’t compromise on the quality by opting for other brands)
1 package of dry yeast (11g)
65g of unsalted butter (SCS brand)
65g of Ghee (QBB pure Ghee)
3.5 Tablespoons of refined white sugar (not brown or unprocessed sugar)
1 Tablespoon of condensed milk
0.75 Teaspoon of fine salt (NOT sea salt!)
3 middle size egg yolks (do not add the egg white as it makes the waffles hard)
1 and 3/4 cup of high quality plain flour eg. Prima brand (sift the flour)
2 teaspoon vanilla and 1 teaspoon pandan flavour
Some Fresh Strawberry (Sliced in half or quarter) and Blueberry
Ice cream (keep in separate cup as we don’t like the waffles to turn soggy when the ice cream melted)
Pan fried few spoonful of grated fresh coconut for sprinkling on the waffles to add extra fragrance
Plenty of love and passion
1. Mix all the dry ingredients flour, salt, sugar, dry yeast in a bowl.
2. Mix all the liquid ingredients fresh coconut milk, condensed milk, Soya milk, butter, ghee, egg yolks in another bowl.
3. Pour the liquid ingredients gradually into the dry ingredients; stir to ensure the homogeneity of the mixture.
4 Set aside for 10 minutes to allow the yeast to do their work.
5. Heat up the waffles maker at the same time.
6. After 10 minutes, use a scoop equivalent to 2 tablespoonfuls for each waffle square tray.
7. A Belgian Waffles is born.
8. Plating: The cup contains scoops of coconut ice-cream. The waffles are topped with fresh blueberry and sliced strawberry with dashes of chocolate syrup and sprinkle of fried grated coconut to perfect the taste.
