Review Summary:

Well cooked claypot rice with the rice nicely charred and crisped and coated around the inner wall of the claypot, with the well marinated chicken, Chinese sausage, vegetables and one of the very minus but important ingredients – good quality salted fish added as the flavour enhancer, we thoroughly enjoyed the chicken in all its caramelized glory together with rice and the myriad ingredients in the claypot.

A good claypot rice is best cooked over the charcoal to acquire the smoky aroma and served with the well seasoned ingredients likes the chicken and good quality Chinese sausage.  Claypot rice requires a much longer cooking time than many of the dishes, some of the claypot chicken stalls may resort to short-cut by pre-cooked the rice in the rice cooker and transferred to the claypot and called it claypot rice! Yes, they may churn out the dish much efficient but too a questionable quality claypot rice.

Good claypot rice must be cooked from the claypot, not pre-cooked. The truly enduring popularity of savoury claypot rice is simmering of the rice from the slow cooking, this is to allow the aroma from the ingredients and seasoning to mingle together with the rice and giving the dish a distinctive flavour that only achievable through this time consuming process.

My family slurped up the pot of the rice except the rice grains left behind that glued stubbornly to the bottom of the claypot, however, my daughter went for the kill and try all attain to dig up every corner of the claypot to unearth the charred but crisped rice, making sure no single grain of rice gone into waste, in the end, we are all bewildered what we saw how clean was the claypot. She is obviously inherited the glutton family virtual traditional of not wasting food…. Not bad.
