Chinese “Carrot” Cake – chye tow kway, 菜头粿
When talking about carrot cake, let’s be specific before the world confused what we are going to talk about. This is the local Singapore version and this is in no way similar to the popular Western carrot cakes that are served as desserts. The fried carrot cake is actually made up of white daikon and rice flour, the carrot cake is then fried till it is crispy and fragrant with eggs, preserved radish and garnished with spring onion.
Honestly speaking, you will never able to find a trace of carrot in the local carrot cake, not understand why we call it carrot cake instead of white radish cake that complicates the whole world. Anyway, we are going to talk about the wok fried white radish type – ok ok.. the wok fried “carrot cake”. One of the all-time favourite local delicacies in Singapore There are two varieties – white and black depends on the final touch, the finishing can be black in colour with added sweet sauce that darken the cake, the sweet sauce will change the dish completely with a taste of sweetness to the traditional white colour salty type.
Hai Sheng Carrot Cake (Ang Mo Kio)
The stall is consistently named one of the best in Singapore for carrot cake, located in a hawker centre in Ang Mo Kio. The cake has the right seasoned to bring up the nice savoury flavour with a crispy exterior; however, the tenderness of the radish cake could be improved to soften the texture which in our opinion, a little too “hard” and not meltingly soft internally.
