After patronizing many of the duck rice stalls recently in part of the island wide braised duck hunting, Jin Ji Teochew braised duck is one of the very few that manned by the young generation.
Melvin – the young man inherited the stall from the parents has no qualm to point out the problem: “Making braised duck is more tedious and requires more hard work than selling chicken rice.
We can comprehend the issue and understand the unappealing trade to be a hawker in the eyes of the younger generation, this is an exemplary example of a young man’s determination to continue the duck rice legacy, he seriously reserved a big thumb up from all of us.
Back to Jin Ji Teochew braised duck; we ordered the braised duck, egg, tau pok and yam rice for $6.80.
Gravy – the gravy has the perfect viscosity, not too starchy or diluted. The gravy has a palatable tangy, mild herbal taste, inundated with piquant flavour, not overly dosing of sodium or sugary sweet, one of the best we have tried.
Duck – duck meat was thinly sliced but not as tender as expected, duck meat was sparingly eaten to ensure it was not run out before the rice! The duck meat was de-boned and posed more challenges when eat.
Soup – the herb flavour was distinct but could further enhance to inject some characters into it.
Rice – most of the duck rice did poorly with the rice, be it white rice or braised rice result in uncooked or poor grade of grain used. We were quite surprised the yam rice here was soft and flavourful, though no yam can be spotted in the pile of rice, the flavour from the dried shrimp or Hei Bi was wholesome and utterly delicious.
Chilli – the chilli was a mix of vinegar and diced garlic which is the right chilli sauce for the duck rice.
